Hazelnuts are an important food source of fat, protein, vitamins and minerals and nutrients. The edible inner part of hazelnuts constitutes approximately 50% of the fruit. The chemical composition of hazelnut kernels is 2-6.5% moisture, 10-24% protein, 50-73% oil, 10-12% CHO, 1-3% cellulose, 1-3.4% ash.
